Chickenless Udon Noodle Soup (with Butternut Squash)

I was really ready to headline this post with something as rad Leave the chicken in the coop and the noodles in the soup! but I have a confession to make. This soup isn’t entirely chickenless. There’s, gulp, stock. I know, I’m a sham. I’m so sorry. If you veggie folk leave and never come back, I’ll understand. ‘Cept for I would so not understand. Please don’t leave. Just take a peeksie at the note below for a quickie vegetarian/vegan variation. All better? Good. Because I have another confession to make. I ah-door noodles. Maybe you recall my ramen rant? … Read More

Shredded Brussie Salad with Lemon Meyer Vinaigrette (and a Full Circle guest post)

Hi guys! Posting a bit quickly today as I am on the road in Ontario, CA, traveling for business. Haven’t spent much time exploring these parts, but I do recall the last time I was here it was to accompany Chris to his mechanical engineering exam. I spent more than seven hours wandering the expanses of Ontario Mills outlet mall alone. (All things considered, it could have been a lot worse. Didn’t lead to nearly the number of pity purchases that solo shopping usually facilitates.) Get this, though. That was a whopping eeeiiiiggght e-i-g-h-t years ago. Sheebus, time flies. Coconut Curry Cod with Kale & Carrots

The people have spoken. Thanks for the comments following yesterday’s prompting, friends. This week has been a bit of a downer with me and Chris both fighting a bug (dontbethefludontbethefludontbetheflu) and a little reader interaction was just what I needed to get back into the groove. And potato chips. Uncommonly-balanced diet be damned! When phlegm attacks, there are only three things I want: The saltiest, crunchiest potato chip one can find. Aggressively carbonated soda. Vernor’s in a can is usually my first choice. In an attempt to remain somewhat healthy, this round I went with Hansen’s Natural club soda. It’s … Read More

Recipe: Parmesan-roasted baby kale & cheddar quesadilla (kale-sadilla?)

A quick post tonight since I promised I’d publish the cheesy dipper (or should that be Cheesy Dipper? it does sound quite proper) pictured with yesterday’s Curried Carrot Soup. This is really more a method than anything else. And a great way to sneak a little green into an otherwise guilty pleasure and still please both kids and picky husbands (or wives), alike. (Side note: sneaking healthy stuff into our future behbeh’s food might be motivation enough to start popping those little guys out. I can’t wait for our kids’ technicolor appetites. They will love Brussel sprouts.) Parmesan-Roasted Baby Kale … Read More

Recipe: Curried carrot soup w/ Greek yogurt & toasted walnuts

It seems we’ve been on a soup streak here lately, and that is A-ok with me. I love soup — to the point that I don’t even discriminate against the canned stuff. I know it’s a sodium bomb and full of all sorts of processed crap, but on a cold day with crusty hunk of sourdough or a drippy grilled cheese, I’m not super picky. If given the choice, however, a velvety, seasonal soup like this one — which can still be made start to finish in less than an hour — is an easy winner. Sweet, subtly spicy and … Read More
