No-Bake Spice Cake Pumpkin Truffles -- These festive pumpkin spice cake truffles couldn't be simpler. Pairing tender Signature SELECT Seasons Pumpkin Spice Madelines with Open Nature Buttercream Frosting Mix, white or dark chocolate and optionally spooky features, they're the perfect bite (and simple enough for kiddos to help with, too!).

Ingredients
  • 18 Signature SELECT Pumpkin Spice Madelines (about 2 containers, with enough leftover for snacking)
  • 1 box Open Nature Buttercream Frosting Mix (or ½ cup leftover buttercream frosting)
  • 1 stick salted butter, softnened2 T milk
  • 1 tsp pumpkin spice seasoning (optional)
  • 3 cups white or semi-sweet chocolate chips (we used 50/50)
  • optional decorations: candy eyes, sprinkles, chocolate sandwich cookies
Instructions
  1. In a small bowl, add Buttercream Frosting Mix, softened butter and milk. Stir until smooth and combined.
  2. In a large bowl, crumble madelines. Add pumpkin spice seasoning and ½ cup of the prepared buttercream frosting and mix until crumbs are evenly moistened.
  3. Scoop mixture by the packed tablespoon and roll into balls (you should have about 30, but feel free to make them larger or smaller to suit your preference). Arrange in a single layer on a parchment-lined baking sheet. Freeze for an hour or until firm to the touch.
  4. In a medium, microwave-safe bowl, microwave chocolate in 30-second intervals until melted, stirring between intervals. Using a fork, roll each ball in the melted chocolate, then retrieve it from the chocolate, allowing excess to drip through the fork tines before placing the truffle back on the lined baking sheet. Repeat with all remaining balls. Drizzle the truffles with excess chocolate (reheated, if needed) and a few sprinkles, or decorate however you'd like! Let set until chocolate firms up; enjoy immediately or store covered in the fridge for up to 5 days.
Notes
To make the monsters: To the melted white chocolate, add 1 tsp butterfly pea flower powder and 2 tsps dragonfruit powder OR tint the white chocolate with gel food coloring until you reach your desired shade. Dip cake truffles in colored white chocolate. Press candy eyes into chocolate before it sets.
To make the mummies: Dip cake truffles in white chocolate. drizzle generously with additional white chocolate. Press candy eyes into the chocolate before it sets.
To make the bats: Dip cake truffles in semi-sweet chocolate. drizzle generously with additional semi-sweet chocolate and press halved chocolate sandwich cookies firmly in place, holding for a few seconds to adhere. Press candy eyes into chocolate before it sets.
Got leftover buttercream and madelines? Try sandwiching the buttercream thickly between two madelines! Serve immediately, or I love snacking on them out of the fridge. :)
