No-Bake Gluten-Free Chocolate Peanut Butter Balls - salty + sweet, crunchy + creamy chocolate peanut butter bon bons made with only 5 simple ingredients (pssst: one of them is potato chips!).

Ingredients
  • 1 cup chunky peanut butter (see note)
  • 1 cup powdered sugar
  • 1 cup thick, crunchy potato chip crumbs (see note)
  • 2 cups semi-sweet chocolate
  • 1 T coconut oil
Instructions
  1. Combine peanut butter, powdered sugar and chip crumbs and mix until a dough forms. (It will initially seem like there isn't enough moisture to bring it all together, but work at it for a minute and it'll come together.) Using slightly damp hands, roll heaping tablespoons of the mixture into balls and arrange on a parchment lined baking sheet. Freeze for 30 mins.
  2. Pull chilled balls from the freezer, and reshape any that may have settled into more formal spheres. Return to freezer for another 30 mins.
  3. Combine chocolate chips and coconut oil in a microwave-safe bowl and microwave in 15-30 second increments until melted -- stirring in between sessions.
  4. Using two forks, drop a chilled ball into the melted chocolate, cover completely, and remove to a parchment-lined baking sheet. Repeat with all the balls, then refrigerate until completely set. (If desired, you can do a second round of drizzled zig zags after the coating has chilled.)
  5. Keep peanut butter balls chilled until ready to serve. Enjoy!
Notes
I've only tested this recipe with no-stir peanut butter varieties, so I will recommend that here. As for the chip crumbs, thick, wavy chips seem to perform best. Just pulse them a few times in the food processor (or crush them in a plastic bag) until they are coarse crumbs.
