Creamy Hummus Soup with Crispy Soyrizo Gremolata (Vegan)

Like so many recipes that find their way to this space, this soup was a happy accident. A well-meaning attempt (and I do mean well-meaning, as not a corner was cut!) at Kenji Lopez-Alt’s intriguing Israeli hummus recipe — more on what makes it so intriguing later — watered down, quite literally, into a slurpable meal worthy of your soup spoon. Too many times I’ve daintily tucked pita into a creamy bowl of restaurant hummus while every fiber of my being screams good lord woman, eating it by the oversized spoonful is the clear winner of all ideas ever! And too many times, apparently, I’ve bump-on-a-logged it, afraid of what my dining companions, or — sin of all sins! — the doler-outter-of-pitas — might think. Because I will admit: when pita is good, it’s responsible for at least half the splendor. But when hummus is good. When hummus is this good. It needs not the company of pillowy fillers. Indeed, it’s a treat to behold all on its scoopable, spoonable own. As suggested, the basis for this recipe is Kenji Lopez-Alt’s Israeli hummus, which claims to turn out that super creamy, whippy-textured hummus available almost exclusively in restaurants or at scary New York deli counters but without all the … Read More

Just a shortie today because I’ve got roughly three weeks of freezer meals calling out to be labeled and organized and tetris’d into a spot that was previously occupied by six frozen ‘naners. Which have now become two ginormous loaves of pineapple-banana loaf cake, also headed for the freezer. Systems are failing. (PS – Do you guys have any interest in the whole freezer food game plan? Mehbeh I’ll do a little posty-post about how it’s all coming together and then a Part Deux when it all gets cooked up for countless post-baby dins and inevitably falls miserably apart. Is that completely, totally boring? Comtotesboringo? Snoresville? Lemme know.) This past weekend Chris and I had a small non-shower at the corner bar chock fulla beers and burgers and chicken strips and cuppycakes and exactly zero games and it was awesome. We’re so lucky to be surrounded by friends that have truly become our second family — and as only children, it’s so comforting to know that our little babes will grow up with more honorary aunties and uncles than she can count. (Well I mean, when she can count, she’ll be able to count them, but I’ma keep things low-presh…) In addition … Read More

You guys. Parenthood is over. I just finished the Serial podcast. Vampire Diaries is getting a little off its game — even for Vampire Diaries. (But, attractive people…) And do we even want to talk about The Bachelor? This season is a freaking circus of crazies and the ring master is an unfortunately fauxhawk’d makeout slut with waaaaaay less facial hair than is necessary for the whole Iowa Farmer thing to be charming. (Also, that matte pink lipstick looks good on exactly none of you, so stop passing it around. JUSTSTOPIT. Jesus.) I think I need a detox from popular programming. Or maybe just a detox, in general. (I feel like here’s where I should put another picture of this salad thingyding. Isn’t it just the picture of health? Chickpeas! Quinoas! Green stuffs! It’s exactly what should be going into your tummy when limos of drunk girls are going into your eyeballs.) OMG, you kinda like the makeout slut, don’t you? DO YOU? But he’d be so much hotterrrrrr with a reeeeeal beeaarrrdddd…. Ugh. Let’s not even. So honestly, I think I’ve said that recipes are “stupid easy” a time or two, but this time I weeeealllly mean it. Step 1. Lemon juice, olive oil, … Read More

spicy pineapple + parsley salad with avocado + chilies

spicy pineapple salad with avocado and chilies | the pig & quill

Greetings from Boston, friends! I just flew in from California and BOY are my arms tired. Is that still a thing? Seriously though, I’m but five hours off the plane and I can already admit to suffering from some serious jetlag. Except, it’s the kind of jetlag that hits you before you swap time zones. Before you boarded the plane. Alrite alrite, before you even checked for the third time that, yes, you packed your charger and yes, the garage door is closed – and wait, should I bring a scarf for the plane? you know how cold I get — aaaaand it’s time to get to the airport already. So basically not at all jetlag and all the way a case of chronic distraction that somehow allowed me to completely space the fact that the internet is abuzz with witches’ brews and finger-shaped treats (sidebar: ew) and peeled grapey things that can only mean it’s Halloween week. So while I should probably be posting Halloweeny (heh, weenie) treats to quell those sweet teeth of yours, instead I give you salad. Cue the violins…  But thassokaaayyyouguyssssss! I have a feeling you’ll forgive me. Because pretty. *eyelash-batting emoji* See see see???? … Read More

Creamy Potato, Leek & Gorgonzola Soup (gluten-free)

Soups on! Does anyone say that anymore? Did anyone say that ever? Is there anything more comforting than a bowl of soup? When you’re sick, when you’re chilled, when you’re feeling too lazy for real cooking but somewhere inside your domestic diva urges you to persist? That damn diva. She sure can be a pesky mofo. Will the questions ever stop? Nah, and unfortumunnately they likely won’t become more interesting. It’s the nature of blogging. Eventually, you run out of things to say. Sors. SOUP! Amazingly, this simple, creamy wonder doesn’t employ a smidge of cream — and when it comes down to it, the cheese factor is even pretty responsible. Like, three ounces for four servings? Come on, we’re practically talking diet food here. (What? There’s WINE in this soup? Freaking alchies. Who DOES that?) But really. Brown some bacon. Saute some veg. (Leeks are all the rage in my CSA box these days.) Into the pot with potatoes, stock and, yep, summa dat fermented grape drink. And then comes the fun part: hellloooooooooo immersion blender. Literally, a stick with a little spinny thing on it that blends soup right in the pot. I know this isn’t rocket science, … Read More

Grapefruit, Gorgonzola, Pear & Parsley Salad (gluten-free)

Game of Thrones warned me: Winter is here! Really! I mean, I’ve been in my CaliBubble for a while, but would you believe the rest of the country is not suffering from a record-breaking drought? If you saw the gigantor snowflakes bombing the asphalt outside my pal’s window right now, there’d be no question. It’s full-blown waynter. (And here I thought the Snowpocalypse was just YA for the forthcoming albino zombie takeover. “Just,” of course, being used super loosely because, duh, I would totally read that.) Anyway. Food! So while I’m here in Minneapolis getting snowed in, I thought yooz guise might want to celebrate summa the fresher flavors of winter with this super refreshing, decidedly seasonal salad. It’s so flippin’ tasty, boyz, you don’t even know. But you will know in approximately 5 minutes, because that’s about how long it’ll take you to prep a grapefruit, chop a pear and bust out your gorg-iest gorg. The bluer the better. (Although if you’re not a blue cheese fan, I’ll endorse a feta substitute. Salty tang, ain’t no thang.) The other key to the delectably balanced flavors of this salad? Plenty of fresh, verdant parsley (flat-leaf, please!) and good olive oil. … Read More

Pig n’ Prairie Pasta (Rigatoni with Easy Bacon & Bison Bolognese)

We’re watching Dexter these days. I hope you understand why that means my posts have been a bit sporadic lately. I’m sure it also explains why I’m hearing the words I’m typing in the voice of Michael C. Hall. Is it still your own inner monologue if it’s in the voice of someone else? In case you’re wondering, it’s still happening. I feel like we hardly even know each other anymore, you guys. So I’m going to try to change that. Here’s a little of what I’ve been up to these days, outside of the kitchen: As we discussed, I’m eyeballing a lot of this guy (bonus points for showing that creme filling who’s boss): And attempting to do more of this: I booked a trip to here for February: (That’s Minneapolis people. And yes, February. Because paste tasted good in kinnygarten.) And here for March: (PDX, yo) And I’m hoping to coordinate a little girls weekend here for April: (Let’s drink wine and Take-a-Napa Valley) I bought these for a STEAL: (Backstory: Kevin is like, “So I read this HuffPost article about how TJ Maxx has great finds on high-end designer shoes. When have you ever seen high-end designer … Read More

Creamy Baked Eggs with Chimichurri (Christmas Eggs! w/ gf option)

This week has been a whirlwind. I’d point out my lack of posting, but perhaps you’ve already noticed? We learned a few days ago that Chris will be starting a new job in two weeks (he’s such a smartie!), we’re toying with the idea of moving (locally, but is moving ever easy?) — and after months of anticipation research, we finally sealed the deal on some new wheels for this little lady. Which begs the question: where was this heated steering wheel thing when I was driving to work in Level 3 snow emergencies a few years ago? Or 4WD, for that matter? Doing things backwards is fun. Happily, Thanksgiving weekend also marked the arrival of a snazzy 6′ Noble Fir, which is looking positively handsome in his Christmas skirt and wing-ed angel top hat. He’s a classy dude. And he’s totally rocking big, floppy plaid bows like it’s 1991. And a few well-placed My Little Ponies, just to keep things kitschy. We’ve even got this grapevine twine garlandy thing going on in all its Pottery-Barn-meets-actual-barn glory. It’s so freaking hip in here, you guys. I can’t even. And I don’t know about you, but once the tree goes up, … Read More

Crispy Chicken & Root Veggies Skillet (gluten-free)

Last week I had a dream that a high school acquaintance told me on Facebook I should “stop by sometime” — and I did. Totally unannounced. I just opened the door to her house, took in the very confused faces of the kids I’ve only ever seen on Instagram, and was like, “So I’m here! I was thinking we could roast some chicken!” In all seriousness, you guys. I was there to roast chicken. Simple as that. And you know, she seemed a little fazed, but not overly so. Instead she kind of just exchanged glances with Jesse Pinkman and his street team, who — duh — were gathered around the living room watching football, and told me the rest of the family would be over soon. That dinner would be on the late side because her mother-in-law had to pick up cannoli from the bakery across town instead of the shop on the corner. She told me she had just bought new Ziploc bags, and they were in the freezer. Then Vin Diesel offered me a beer, declared I was “family now” and reminded me that the cook never cleans. At this, Jesse’s crew nodded subtly in acknowledgement. They’d … Read More
