slow cooker vegan mole chili

Slow Cooker Vegan Mole Chili Recipe -- just 25 mins prep (via thepigandquill.com) #vegan #recipe #glutenfree #chili #crockpot

Let me tell you what I did this weekend. I pushed around strollers for three hours and then ate a sandwich the size of my face. I mean, we also did the Valentine’s Day thing and all that jazz (panna cotta for all!), but sandwich the size of my face was pretty much the highlight. And in case you’re wondering, we are no closer to choosing a stroller than we were before. Namely because there’s apparently no such thing as chic and multipurpose and affordable and joggable and schlep-all-your-shittable without tipping over and knocking your newborn in the dome. I’m about THIS close to just poaching a cart from the Target parking lot and calling it a day. And now I’m done talking about baby stuffs. For this post, at least. Because I feel like there are maybe three reactions to these kinds of rants, and they’re either: Current Parents: Suck it up, porkchop. Hip Young Singles or Not-Yet-Even-Trying-To-Be-Parents: SNORE TIMES A MILLION. My Mom: Tell me everything. Since most of you probably aren’t my mom (hi mom! are you reading this on your new smart phone? proudsies!), I’ll try to rein it in. No promises, though, because babies babies everywhere and not … Read More

“his n’ hers” panna cotta (coconut cream w/ cinnamon-bourbon whip + strawberry-sesame w/ matcha whip)

Two easy, perfectly romantic panna cotta recipes - Coconut Cream + Cinnamon-Bourbon Whip and Strawberry Sesame + Matcha Whip. Just 20 mins prep + chilling. Full recipes at www.thepigandquill.com. #recipe #sweets #valentinesday #dairyfree

Let’s talk about how I just spent almost half an hour trying to pinpoint the crackling sound coming from the freezer only to realize it’s coming from a wood-wick candle I left burning on the bathroom counter. And now my kitchen is littered with frozen food and I get to play my favorite-ever freezer game “hide the banana(s).” Except it’s not nearly as fun or dirty as it sounds and more like I really, really need to make banana bread some time in 2015. Yikes. A. Bee. Now (Bachelor spoiler) let’s talk about how Farmbeezy Chreezy almost totally redeemed himself this week by ditching not one but TWO girls in the Badlands and then flying away in a helicopter all double-oh-seveny!!! Those girls, though. Kelsey, though. How likely is it that she’s gonna pull a real life Gone Girl on some poor dude? I feel like VERY LIKELY is the only answer. She got that special kind of Calculated Crazy going on that you just don’t fuck around with. Super scary. Ok, now let’s talk about panna cotta. It might seem like kind of a goofy stretch to jump from The Bachelor to Valentine’s Day, but real life, Chris and I watch The Bachelor together every week, … Read More

toasted walnut enchilada hummus with cilantro + lime

Two recipes in one: toasty, nutty hummus drizzled with a fast and foolproof spicy sauce. Super addicting! Full recipe at www.thepigandquill.com. #vegan #superbowl #snacks #recipe

Oh yay! You guys are still here. Meaning my affinity for hot dogs (and a decidedly Americasian interpretation, at that) didn’t scare you away. I knew you could hang. As your reward, this week we’re talking more Superbowl-ready eats that are borderline goofy (enchilada sauce on toppa hummus? she dun lost her shit!) but silly delicious all the same. You’ll see what I mean when we get into the nitty gritty later on. And really, is it even that weird? It’s clearly not bizarre enough to warrant the gibberish I keep slapping in between all these parentheses (like this crap — which is here solely for the purpose of example), but I feel a little insecure every time I post something that’s not, like, THE Trending Item on Pinterest. (Side note: until I dunk an Oreo in waffle batter and drizzle it with peanut butter, I’m not sure I’ll ever be That Trending Item.) (Side side note: I would so eat that.) You want to lob a boomerang at my head right now, don’t you? (It would be kind of poetic and all given its parenthesis-y shape…) I’m stopping. So, late last week, I went into the lab for glucose testing, which is … Read More

french lentil soup with kale + bacon and waffled scamorza “en carroza”

The perfect winter soup (gluten-free) + battered, grilled Hawaiian bread sammies stuffed with smoked mozz. Not sure it gets much better! Full recipe at www.thepigandquill.com. #soup #sandwich #winter #recipe

Aloha from Maui! We’re babymooning this week (holy almost 26 weeks — where do the months go?) and falling quickly in love with everything the island has to offer. So while the rest of the country is contending with the plight of the season, we’re wallowing in the misery of cool ocean breezes and more shave ice than is probably healthy. I might just birth a walking sno-cone. Nobody act surprised. Also, to those of you facing said plight: I’m sorry. If it makes you feel at all better, I’ve seen plenty of your neighbors getting their serious burn on, and it doesn’t look like a fun time. (Mister Cincinnati Reds Hat, I’m looking at you.) So you know, you’re maybe better off. Because even a Bucks Championship (!!!) can’t take the sting out of sunburn. Should we get on with this soup dealio? I schmink so. Earthy, porky lentil soup is one of those things I could eat all year long for pretty much any/every meal. It’s hearty and savory without ever feeling overly heavy or indulgent. Ok, maybe when I eat two and then three bowls in a sitting, it starts to feel a little heavy. But I blame it on the bacon, you … Read More

grain-free mini persimmon spice cakes (+ eggnog parfaits)

Two recipes in one! Perfect little giftable cakes and festive parfaits perfect for the holidays. Full recipe at www.thepigandquill.com. #grainfree #holidays #recipe #baking #christmas #newyears #eggnog

It’s Christmas Eve! Around here, that means prepping for the in-laws’ annual tamale feast and perhaps the most competitive pirate’s gift exchange that ever was. Our particular version features plenty of red wine and tequila and a particularly obscene vase that makes a comeback every year. It’s a raucous good time and one of those small things I know we’ll enjoy savoring in its current glory before things like an unfortunate floral receptacle that seriously resembles a vagina and nothing else takes a backseat to our inevitably lovely little piglet. How well do you feel like you know my family right know? I’m just going to jump right into persimmons. Is it persimmon season where you are? (Super graceful.) We’re getting to the end of it here, but for the last few years, without fail, I’ve come home from Thanksgiving at my grandparent’s house with at least one hulking sack of hazy, fiery-hued Fuyus. For those unfamiliar with the persimmon family tree, those are the little flat guys that can be eaten while crisp, like an apple. I prefer them drastically to the more teardrop-shaped Hachiya that are eaten once the flesh becomes soft and almost custardy. They sound intriguing and even quite … Read More

fennel-spiced turkey + bacon breakfast sausage with crispy parmesan home fries

In case you missed it, we’re having a babes. A babes! After years of wanting this, we’re excited, of course. But we — or maybe I should just say I — am also a little…lost with how to feel. And that, in itself, feels more than a little confusing. Chris is full of pure elation and joy and anticipation, his eyes literally alight in a way they’ve never been before as he imagines our new little life with this new little love and all the overwhelming emotion that will surely accompany the growth of our family. And while I have warm-fuzzies just seeing that look on his face, I’m still stuck somewhere between When Is This Going To Feel Real and No Seriously, All Those Nurturing Hormones I Read About Can Make An Appearance Any Day Now. Which kind of settles out into a place of quiet panic. I mean, I do already sense a bubbling up of love for this crazy, tiny, weirdo within, but at the same time, I’m harboring some guilt for not being one of those women who is completely and utterly natural at being pregnant. And it’s not that I’m nervous or scared that this baby won’t be everything we ever … Read More

two-potato latkes with smoky eggplant relish, spiced persimmon-apple sauce + sour cream

Perfect for entertaining! Crisp potato pancakes with two simple toppings that make great recipes on their own, too. Sweet, spicy, smoky, creamy! Full recipes at www.thepigandquill.com // #holiday #hanukkah #recipe #glutenfree #vegetarian

My mom has always said that we, the Chinese people, have an unspoken kinship with Jewish folks — insofar as “where Jewish people have guilt, Chinese people have shame.” That, and we both love to eat. Thirty seconds ago, I shared this theory with my Jewish friend, Randi (we’re sitting on her sofa, re-watching the latest episode of Parenthood — because apparently we gluttons for punishment also share a passion for fug-faced sobbing) and she laughed. And then she agreed. And then she offered me a popsicle. So, there ya go, Momma. #nailedit And with that, I give you: Chinese-approved Hanukkah foods. Hellooooooooooo latkes! Remember that little discussion we had about how much I (read: the pigletus) am loving potatoes these days? I mean, yeah, the duck fat in that last recipe might have had something to do with it — because I would, quite frankly, eat a crate of packing peanuts a la lard d’mallard — but dem spuds be hollerin’ at me something fierce. (I’m sorry, I don’t know what’s happening to my vocabulary.) So instead of putting one potato in these classically prepared tater cakes, I put two. One potato, two potato… That’s all the potatoes. But yay, right? Two-potato latkes. Because the alternative was … Read More

I can already tell that this winter is going to be about DUCK FAT IN ALL THE THINGS. If you’re a veggie-terry-an or a vegan or a fish-a-whateveran, feel free to read that as OLIVE OIL IN ALL THE THINGS. Just know your tastebuds are getting royally ripped off. Because le fat of le duck is le bombdiggidamndamn. (Would you believe I almost considered going into technical writing in college? True story. Something about wanting a paycheck.) Per the usj, for this Thanksgiving’s brunch we ditched the turkey (figuring everyone heads off to a turkey household for dinner) and opted to cook up the whole rest of the barnyard instead. Thassright, lerdies and gernts: we cassoulet’d till the cows came home. To live. In our stomachs. We followed every critically outlined step of this Serious Eats cassoulet recipe, save for swapping the garlic pork sausage for a garlicky beef kielbasa, and were rewarded with one of the most purely satisfying comfort meals I’ve ever sat down to enjoy. Duck fat, dark meat chicken (yep, chicken, not duck — read the whole background article, it gets right into the who’s and why’s), salted pork belly, those smoky beef sausages and tender … Read More

60-minute (mini) thanksgiving: mayo-roasted chicken wings, cranberry and spice brussel sprouts + pumpkin-pecan stuffing

60-minute (Mini) Thanksgiving: Mayo-Roasted Chicken Wings, Cranberry + Spice Brussel Sprouts and Pumpkin-Pecan Stuffing with Cheddar + Thyme // the pig & quill // #thanksgiving #holiday #fall #recipe

Holy freaking (American) Thanksgiving is in two weeks. I say that like I’m telling you something, I realize. Like you don’t know that for yourself. But that’s only because things like calendar events tend to get away from me, so I need subtle reminders — like Target swapping bins of Reese’s ghosts for motorized Lazy Susans topped with shiny plastic trees — to shake me out of my “it’s squash season but let’s pretend it’s still summer” daydream. So just to be clear: I know you know it’s almost Turkey Time. But I’m gonna go ahead and keep freaking out. Fortunately — and here’s where you’re going to be really impressed by me — I anticipated the shit out of this freak out. I knew old T-Givvle (← that happened) would schneak up and bite me in the butt, and I totally beat it to the punch by whipping up this tiny feast before I even packed my bags for this year’s mo-do trip (to Spain!). Ok, maybe that doesn’t say much because I am the world’s WORST procrastinator when it comes to packing. Also, Spain update: I ate like a kilo of salted piggy parts today, which *phew* is cool given the whole a-kilo-is-pretty-much-just-an-ounce conversion … Read More

fried honey-garlic delicata with white miso + furikake // gf + vegan

fried honey-garlic delicata with white miso + furikake // the pig & quill // #glutenfree #fall #vegan #QSquaredNYC

You guys, I’m back from Boston, and I had more good times with the bestie than one is supposed to have on a “work” trip, I’m almost certain. We ate all the things (you should def skim Insty for the recap — ps, follow me! :)) and walked all the places (it’s normal to draw every comparison between Hogwarts and Harward, right?). We even cooked LIVE lobbies for the first time ever, and no one died (well…). But but but! They didn’t scream! So it was about 900 times less traumatic (for me) than I expected. Also, when I say we cooked lobsters, I mean Mir and her boy cooked lobsters while I busied myself slathering too much bread with too much butter because duh. Aaaand, I visited an H Mart for the first time and about lost my isht right then and there. Have you guys been? It’s like the AAA Five Diamond equivalent of schmancy Asian grocery stores. Liiiiike: H Mart:Generic Asian Grocery::Sanrio Store: Stationary Shop For real. Except everywhere you turn, there’s a new clinically packaged container of tiny fishies or the biggest daikon ever to ogle instead of a million fruit-shaped erasers to smell. I know you’re … Read More
