This past weekend was full of firsts. My first real vacay away from the babe. My first show at Red Rocks. My first exposure to Dr. Pimple Popper. (I can get into a lot of bizarre shit, but I just can’t do it, you guys.)

The four days I spent in Denver were so very indulgent. Leisurely breakfasts in with old friends. Leisurely breakfasts out with new friends. Pedicures. Sour beers. Reclining movie theater seats. Wait — backtrack. MOVIES IN A MOVIE THEATER?? BE STILL MY HEART. ♥

Daily hair washing. Rootbeer milk. Driving stick shift. Caffeine.

Is this real life? I kept asking myself.
Nay, this how the childless live, a little voice answered.

Oh. Huh. I had completely forgotten.

So what makes it a Blueberry Pie Shake?

Let me tell you: these pie shakes — PIE SHAKES!!! — are a continuation of this weekend’s indulgence. They won’t win any clean eating awards, but in the name of living a little, I’m gonna ask you to just roll with it.

Summery blueberries.
Nutty brown sugar.
Real ice cream.
A one-two punch of almond butter and shortbread cookies that, together, simulate the richness of pie crust.

I’m not going to try much harder than that to sell you on these things, because when it comes down to it, you’re either a pie shake person or you’re not. Put another way: you’re either my friend, or you’re not.

Just kidding: I have no fraaaannds.

Many hugs to Chris and Momma Stoffel for showing our babe such a good time while I was off galavanting at high altitude these past few days. That little bug’s complete apathy at my return is nothing if not a testament to your superior caregiving skills. Or my stale airplane hair. What I’m tryna say is: I’d pay cash money for that sweet bugaboo to squeeze me.

Brown Sugar Blueberry Pie Shakes -- as indulgent as they sound, all the flavor of blueberry pie in a creamy dreamy blueberry milkshake whirled with nutty almond butter and studded with shortbread cookies. Yes please.

Makes: 2 servings
Ingredients
  • 1 cup vanilla ice cream, plus extra for topping
  • 1 cup frozen blueberries, plus extra for topping
  • 4 shortbread cookies, plus extra for topping
  • 2 T almond butter
  • 2 heaping T brown sugar, plus extra for topping
  • ¼ tsp cinnamon
  • pinch salt
  • 1.5 cups milk or almond milk
Instructions
  1. Combine all ingredients in a high-powered blender in the order listed and blend until smooth. Divide between two glasses.
  2. Top each glass with an additional scoop of ice cream, a handful of blueberries, a shortbread cookie and a generous sprinkling of brown sugar. Enjoy!

    I’ve never been to Denver but I was a-creepin’ on your Instagram and it looks so fun! On my travel list. Will hopefully go this year!

    1. It was SO fun, Erica — and we didn’t do half of what we could’ve done in the area. (Essentially we just ate and drank, and even with four days in town we still barely put a dent in our belly list.) And YES – that color! Anything THAT purple is basically a superfood, right? Thought so! 😀

  2. who needs clean eating awards?! the almond butter should count for something, anyways. and lol: check out “please come home for christimas.” the timing is a little awkward, but you might appreciate the lyrics (and it was really fun to sing when i was in choir).

    1. Ah yes, “my baby’s gone I have no friends.” What if my baby is my ONLY friend? Is that better or worse? 😉 And YES to calling out that almond butter as health food. It makes it all better to slurp this down for two “meals” in a row!

  4. Girl, I loooooooove these so much. I just want you to come back to Denver and make some for me. Because LAZY. Right now, all I want to do is catch up on sleep and watch Netflix. That’s okay because seasons do change. I’m looking forward to renewed autumnal-driven energy. You brought some cooler air here, when you visited, for sure. I’m not complaining!!

    1. So sweet, Jayme. We had the loveliest time, too, and I’m so glad we got to get out of the city center a bit to explore at your urging. Such a fun weekend, and Amanda and I both agreed that Devil’s Food was one of the most memorable meals (given both the food AND company, of course!). And old friends from high school is such a perfect way to describe our (long-awaited) get together. Let’s not let another “10 years” pass us by! 😀

    1. Ohhh man Red Rocks was AMAY.ZING. Sherrie! I don’t know what I was expecting. I mean, I guess I had pictured the amphitheater accurately but for some reason I had no idea how high it was set over the surrounding landscape and skyline. It knocked my socks off.
