One: they’re super easy. Two: they taste super fancy. Rich and silky with spicy warmth and that mouth-watering sea salt? Bomb. Three: No-bake ramekin food FTW.

You caught me. This one was in the Earth Day round up, too…but you gotta give it to me: it’s kind of a jack of all trades. It’s a Mexitarian wonder dish full of spicy, garlicky flavors mellowed out with sweet and savory spuds. You know that orange greasy flavor you pretend you don’t like? (Think drippy taco…) This is that, just cleaned up a bit.

Ok, here goes: I’m kind of obsessed with the weirdly sweet scoopable corn cake you get at some Mexican chain restaurants. The one that tastes like someone is baby-birding you a mouthful or cornbread? Sick right? You guys, it’s so good. So if that married a pineapple and they made sweet love in a lemon grove, this would be their strangely addictive baby. If any of that is turning you off to these, please ignore my banter and just make them.

A dish near and dear to my heart based on my favorite book and strongly rooted in one my most beloved cultures. Just look at the thing! It’s like you batted open a pinata of deliciosity. Just ridic. It’s spiced (but not spicy), smoky, fruity, creamy, cool — and just the teensiest bit tropical. A real showstopper, show-show-stopper…..Anyone else miss Danity Kane?
