Cinco de Mayo Roundup: Cray for ¡Olé!

Hola. (Also — Holla!)

Ima keep this short. Reaaaaaaaaaaaaaaal shoooooort. (Apparently not that short since I’m playing it pretty fast and loose with the emphasized vowel sounds.)

Tomorrow is Cinco.
I’m at the lake. Margs are calling. (Yes, I know it’s 8am…)

I’d attempt to share one with you in the form of a recipe, but I might be the world’s worse bartender.

So instead, hows about we do another quickie recipe roundup — Mexican edition — to make sure you have a full cushion before unwisely donning that boozy sombrero?

Sweet. Lessdoeet.
Have a festive and safe Cinco, everyone!

xoxo,

Cinco Recipes! Salted Mayan Chocolate Pots de Creme | the pig & quillEasy Salted Mayan Chocolate Pots de Creme
This guy, oh, what can I say. The recipe that kinda blew up the ol’ P&Q there for a while. (Pinterest has Holy powers, I’m telling you!) I love these Pots de Creme for so many reasons. One: they’re super easy. Two: they taste super fancy. Rich and silky with spicy warmth and that mouth-watering sea salt? Bomb. Three: No-bake ramekin food FTW.
Huevos con Soyrizo - Earth Day Roundup | the pig & quillHuevos con Soyrizo with Two-Potato Hash
You caught me. This one was in the Earth Day round up, too…but you gotta give it to me: it’s kind of a jack of all trades. It’s a Mexitarian wonder dish full of spicy, garlicky flavors mellowed out with sweet and savory spuds. You know that orange greasy flavor you pretend you don’t like? (Think drippy taco…) This is that, just cleaned up a bit.
Cinco Recipes! Mini Pineapple Corn Cakes with Lemon Glaze | the pig & quillMini Pineapple Corn Cakes with Lemon Glaze
Ok, here goes: I’m kind of obsessed with the weirdly sweet scoopable corn cake you get at some Mexican chain restaurants. The one that tastes like someone is baby-birding you a mouthful or cornbread? Sick right? You guys, it’s so good. So if that married a pineapple and they made sweet love in a lemon grove, this would be their strangely addictive baby. If any of that is turning you off to these, please ignore my banter and just make them.
Cinco Recipes! Braised Pork Belly Tacos | the pig & quillBraised Pork Belly Tacos
Fusion food is fun! Just ask Gina at So…Let’s Hang Out. She did Mexico meets Greece. This is Mexico meets Asia, which kind of seems appropriate given my circumstances. I mean seriously, folks, if my kids come out looking half as good as these tacos taste, it’s going to be Toddlers and Tiaras all the way. Just sayin’…
Cinco Recipes! Chiles en Nogada | the pig & quillChiles en Nogada con Coco (Chilies in Walnut Sauce with Coconut)
A dish near and dear to my heart based on my favorite book and strongly rooted in one my most beloved cultures. Just look at the thing! It’s like you batted open a pinata of deliciosity. Just ridic. It’s spiced (but not spicy), smoky, fruity, creamy, cool — and just the teensiest bit tropical. A real showstopper, show-show-stopper…..Anyone else miss Danity Kane?
